Do you grow your own peppers?

Yes!  We work with a supplier to supplement our crops which helps to keep our inventory consistent across seasons and allows us experiment with new peppers and growing techniques in our limited space.  However, because some ingredients are decidedly seasonal, that is reflected in our product availability.  

Why Xanthan Gum?

Xanthan gum is a plant-based thickening and stabilizing agent. It is named for the bacteria, xanthomonas campestris, which plays a crucial role in this description. Technically speaking, xanthan gum is a polysaccharide, which is just a fancy way to say "a string of multiple sugars." To create xanthan gum, the xanthomonas campestris bacterium is allowed to ferment on a sugar. The result is a gel that is then dried and milled to create the powder substance.

Xanthan gum has a number of powerful properties. First, it works as an emulsifier, encouraging liquids that normally don't like one another to mix together. Second, it works as thickener, increasing the viscosity of liquids and batters. Third, it can create a creamy texture.

In the world of gluten-free baking, xanthan gum plays the crucial role of imitating gluten.  For our hot sauce, xanthan gum keeps it from separating and helps it cling to all of your favorite foods.

Tell me about your kitchen?

Our hot sauces are all handmade in Emily's home kitchen and are not inspected by the Department of State Health Services or a local health department at this time.  We are excited to announce our move to a commercial kitchen soon.  

How do you set the price?

Our prices are cost based. We are excited to continue to revise our pricing as we grow and increase our product offerings.

What are your shipping times?

We are a small business and work to get shipments out in a very timely manner. Please keep in mind that shipments out of state and internationally typically take longer to arrive depending on the shipping carrier you choose. Typically UPS takes 3-4 days and USPS takes 1 week from the ship date. 

Do you ship internationally?

      Yes, we are happy to announce that we do ship internationally. Please keep in mind that the recipient is responsible for paying all brokerage, duties and taxes associated with international shipping.

I have not received my order, what can I do?

     First, please check your tracking number that we provide once we have  shipped the item. Factors like Covid-19, Unforeseen Disasters and Weather Delays can play a part in shipment delay. Once the package has left our facility, it is out of our hands. Please contact the carrier of your choosing to be proactive on missing or delayed packages. 

What carriers do you ship with?

     We currently ship with UPS and USPS. 

Do you accept returns?

     No, our products are not returnable. If you have an issue with one of our products please reach out and we would love to discuss a solution.
